Introduction

This is a low calorie fat free clear light soup with lots of flavor. Serve a bowl as a great start to a meal or for a light lunch. This is a low calorie fat free clear light soup with lots of flavor. Serve a bowl as a great start to a meal or for a light lunch.

Ingredients

    4 cups Chicken broth
    1/2 onion, chopped
    1 tsp. jalapeno, chopped
    1 garlic, chopped
    1 tsp. lime zest
    1/2 tsp. Cumin

    14 raw shrimp with peels
    5 mushrooms, sliced
    1/2 cup tomatoes, chopped
    1 lime, juiced
    1/4 teaspoon salt
    dash Tobasco
    1/4 cup cilantro
    1 lime, wedges

Directions

Bring broth, onion, jalapeno, garlic, zest, cumin simmer for 10 minutes.
Add shrimp, mushrooms, lime juice, salt and pepper & Tobasco.
Cook 3 minutes until shrimp turn pink.
Stir in tomatoes
Stir in cilantro and serve with lime wedges.
