Blueberry Apple Sauce Loaf

Ingredients

    1/4 cup butter, softened
    3/4 cup sugar, scant
    1/4 cup apple sauce
    1/4 cup apple juice
    2 eggs
    1/2 cup milk
    1 teaspoon vanilla extract
    1 3/4 cups all-purpose flour
    1/8 teaspoon salt
    1 teaspoon baking powder
    1 cup fresh or frozen blueberries

Directions

Preheast oven to 350F. Put muffin papers in 12 cupcake tins or grease and flour a loaf pan. Get out two bowls. In the larger of the two, cream the soft butter and sugar, then cream in apple sauce and juice. mix in eggs, milk and vanilla. In second bowl whisk together dry ingredients. Mix dry ingredients into wet--do not over mix (muffins will be tough). Add blueberries to batter and gently fold in. Put into muffins cups or loaf pan, and put in oven.
Muffins bake for 18-20 minutes.
Loaf pan bake for 45 - 55 minutes
Remove from oven and put on wire rack to cool.

Serving Size: makes 12 muffins or 1 loaf
