Vegetarian Blueberry Pancakes

Number of Servings: 6

Ingredients

    1 cup whole-wheat flour
    1 cup white flour
    3 Tbsp. sugar
    3 Tbsp. baking powder
    1 tsp. sea salt
    2 cups vanilla soy milk
    3 Tbsp. canola or safflower oil
    1/2 cup frozen blueberries
    1/2 cup fresh blueberries
    (or 1 cup fresh)

Directions

1) Combine the dry ingredients in a bowl and sift together. Add soy milk and oil and mix until smooth.

2) Ladle onto a hot griddle. Add frozen blueberries on top. Cook for 2 to 3 minutes each side or until golden brown.

3) Serve with fresh blueberries and enjoy!
