Margarita chicken tacos

Introduction

This is my lightened version of Chili's new margarita chicken tacos. Packed with chicken, veggies and beans, serving them on whole wheat, low carb tortillas gives you excellent nutrition. Each taco is very large and has only about 200 calories but boasts over 10 grams of fiber and 22 grams of protein while only having 5 grams of fat.

To make it even easier, use a 12.5 oz. can of chunked chicken breast and frozen diced peppers and onions (I use Pictsweet).

Ingredients

    1 lb. boneless, skinless chicken breast, cut into small strips
    1 zucchini, diced
    1 bell pepper, diced
    1/2 onion, diced
    3/4 cup black beans (1/2 can), reduced sodium
    8 tbsp. marinade of choice

    8 low carb whole wheat tortillas, taco size
    1 oz. lime juice
    1 tbsp. finely chopped fresh cilantro (or 1/2 tbsp. dried)
    1/2 cup shredded cheddar (2% milk)
    8 tbsp. of fat-free sour cream
    16 tbsp. of chunky salsa
    1 cup of shredded lettuce

Directions

* Mix together chicken breast strips and vegetables with marinade. Marinate for 30-60 minutes.
* Saute chicken and vegetables in marinade until chicken is completely cooked and vegetables are tender; approximately 15 minutes over medium heat.
* Layer chicken and vegetables in the tortillas.
* Top with remaining ingredients as desired.

Serves 8

Serving Size: Makes 8 tacos
