Chicken & Corn Chowder

Introduction

Number of Servings: 8

Ingredients

    1-2 tbsp olive oil
    2 small onions (chopped ~ 1.5 cups)
    1-2 stalks celery (chopped ~ 0.5 cup)
    4 medium potatoes, peeled & finely chopped
    3 cups chicken stock
    3 cups 1% milk
    ~ 20 saltine crackers (crushed)
    3 chicken breast halves (cut into bit-sized pieces)
    ~ 1.5 cups corn (fresh or frozen)
    ~ 1 tsp salt
    ~ 0.5 tsp black pepper
    1-2 Dashes cayenne pepper


Directions

In large pot, add olive oil. Saute onions and celery oil for at least 5 minutes until onions are translucent. Add potatoes and chicken stock. Bring to a boil. Once boiling, reduce heat and simmer for ~ 10 minutes -- until potatoes are tender.

During this time, in a separate boil, combine crushed crackers and milk. Allow crackers to soak in milk for at least 5 minutes.

Once potatoes are cooked, add cracker/milk mixture to the pot. Add chicken, corn, 0.5 tsp salt & some of the pepper. Allow to cook on med-high heat for 10-20 minutes, until chicken is cooked thoroughly. Add more salt and pepper to taste.
