Cauliflower mac and cheese

Introduction

Puree cooked cauliflower and mix with cheese for baked mac and cheese Puree cooked cauliflower and mix with cheese for baked mac and cheese
Number of Servings: 6

Ingredients

    1 cp cooked and pureed cauliflower
    1 cp whole wheat noodles
    1/2 cup cheddar cheese
    1 cup 1% cottage cheese
    1 peice ezekiel bread, toasted and chopped in processor.

Directions

Boil small head (chop it first) cauliflower in water, about 20 minutes or until soft. Then drain and puree until smooth.
Cook wheat noodles.
Combine cheese, cottage cheese, and cauliflower puree in a baking pan. Toss with noodles. Top with bread crumbs and bake at 350 for 20 minutes or until done.

Serving Size: Makes 6 servings.
