HCG Onion Soup

Introduction

A pretty tasty Onion Soup, compatible with Phase 2 & 3 HCG diet. Additional Salt/Pepper or Garlic Powder will not alter the Nutritional Value. The Worcestershire should be omitted for Phase Two. Ingredients

    2 Med Onions Sliced
    1 Cup Celery, Finely Chopped
    3 cloves Garlic, Minced
    2 Cup Beef Broth, Swanson, Fat Free, Low Sodium
    1 TBS Worcestershire Sauce
    2 tsp *Tone'sBeef Base -

Directions

Heat skillet or pot over Med-High heat. (Cast-Iron is great for caramelizing Onions & Celery without any oil.

Add sliced Onions to pan and begin caramelizing them
Add finely chopped Celery to pan and continue heating the Onions & Celery to soften them. About 20 minutes total.

Add minced garlic, Season to taste, add the Worcestershire Sauce and Fat Free Beef Broth.

Simmer till vegetables are softened. The Tone's Beef Soup Base may be omitted or substitute a Beef Boullion Cube. (The Boullion has fewer calories so it will alter the Calorie count downward by 20 calories for the whole pot or 5 calories per bowl.)

*NOTE: Modifications that would alter the Nutritional Value.
If you want you can brown all or part of your 4 oz. of 93% Lean Ground Beef and add 1 Cup of this soup to have a truly beefy onion soup. For Phase 3 dieters you can also add 1 oz. of a Fat Free Mozarella to your soup and you can even float the cheese on your Melba Toast allocation.
