Fiesta Chicken

Introduction

Serve eight hearty servings with only one pot. Serve eight hearty servings with only one pot.

Ingredients

    2 large Poblano Peppers, seeded and cut into strips
    1/2 Yellow Onion, diced
    2 Tbs. butter
    6 Chicken Thighs, skin and bones removed, cut into large chunks
    2 Boxes of Rice-a-Roni Mexican style
    1 can Green Giant Southwestern Style Corn
    2 cans Red Gold Diced Tomatoes and Green Chiles

    At least 16 tortilla chips. I like the Mission brand strips variety.

Directions

Saute the onions and peppers with butter until soft and starting to brown. Remove to a bowl. Place the chicken thighs in the pan and brown on both sides (about 5 mins. per side). Put the chicken aside in the bowl with the peppers and onions. Follow the directions on the box for the Rice-a-Roni, sauteing the rice and vermicelli until golden. Use the fluid in the Red Gold tomatoes for part of the water you need for the Rice-a-Roni. When the mixture comes up to a boil, add the corn, the tomatoes, the peppers, onions and chicken back into the pot. Lower the flame down to a simmer and cover the pot. Let cook like this for 15 minutes. At that point, turn off the flame, stir the pot, add the tortilla chips to the top, and put the lid back on for another 10 minutes. Stir once again before serving, so that the softened tortilla chips are incorporated into the mixture.
