Chicken and Squash stew

Ingredients

    1 tablespoon butter
    1 small onion -- diced
    2 cups winter squash -- diced small
    2 cups chicken, diced
    1/2 cup quinoa -- rinsed and drained
    4 cups chicken stock (or vegetable stock if you prefer)
    1 cup water
    1 teaspoon soy sauce
    1 tsp marjoram
    1/2 teaspoon salt
    2 carrots, diced
    2 cups kale, sliced thin
    1 8 oz. package of sliced mushrooms
    chopped chives for garnish

Directions

1.Saute the onion and squash in the butter, add quinoa and saute a little longer. Add the stock, soy sauce, tarragon and salt and bring to a boil. Cover and simmer for 15 minutes.

2. Add carrots and kale and simmer an additional 15 minutes.

3. Crush the squash with the back of a spoon to thicken the stew. Taste for seasonings. Served garnished with the chopped chives.
