Spring Rolls - Tasty & Easy

Introduction

An easy & healthy way to make spring rolls - as a side or as a main dish! With canned chicken, these are about 50 calories a piece. Without chicken, they have only about 35 calories a piece!
No deep fat frying or any oil at all - these are tasty little snacks, side items, - -or eat 3 or 4 for a healthy lunch!

Ingredients

    1.5 cups shredded green cabbage
    1.5 cups shredded red cabbage
    6 baby carrots, shredded
    2 tsp ginger root, grated
    1 clove garlic, grated
    1 TBSP soy sauce
    2 TBSP Oyster Sauce
    1 can chicken breast (5 oz can)
    8 rice papers

Directions

In hot frying pan, add about 1/3 cup water. When boiling, add in the cabbages, carrots, ginger root, and garlic. Add in the oyster sauce and soy sauce, and saute until the cabbage is just beginning to soften.
Pull off heat.
Prepare rice papers for rolling - I put hot water in one plate, and put a whole rice paper on top of the water, then I sink the paper, covering it with water for about 5-10 seconds.
Place damp rice paper on dry plate, add cabbage filling and wrap up.
Wait until they dry a little to eat. Alternatively, you can pop them into a frying pan with a little non-stick spray, and sizzle the outsides a bit.


Serving Size: Makes 8 rolls
