Introduction

These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs! These “mashed potatoes” taste just as good as the real thing, but they’re much lower in carbs!
Number of Servings: 4

Ingredients

    6 cups of chopped cauliflower (fresh or frozen)
    2 tlb. Smart Balance spread, melted
    1/4.cup oz. half and half (or fat free half and half)

    Butter.Salt
    white pepper


Directions

1. Heat cauliflower with an chicken.broth.in a microwave safe bowl until tender.



2. Mash cauliflower with spread and half and half until at the desired consistency. Add Butter.salt and white pepper to taste.



Serves 4.
