Chili Beef Polenta Bake

Introduction
A hearty meal casserole that satisfies! Trade ground turkey for beef in this recipe to cut a few calories and grams of fat, but I love the real deal. A hearty meal casserole that satisfies! Ingredients

1 lb extra lean ground beef
1 pkg chili seasoning
1 cup instant polenta
2 medium tomatoes, sliced
1 cup shredded cheese
cilantro to top
Directions
Brown beef and add seasoning - stir to combine.
Cook polenta according to directions - 3 cups boiling water to 1 cup polenta. When done, add beef mixture to polenta and stir.
Press polenta & beef mix into a greased 9x13 baking pan. Top with sliced tomatoes, cheese & cilantro.
Bake at 350 degrees for 20 minutes or until cheese is melted and browned and casserole is heated through.
Serve with a side of my Guacamole for a truly awesome dish!

why not personalize your flavors with mexican chili powder,adobo,cumin,small dash achiote powder,and like that, i feel the packets of pre-fab seasonings are to much money for the amount you get...i pay a little more up front for large containers of spices,and blend my own,it's better,less salt. - 11/13/12

This was really good, fast & easy. I used ground turkey instead of beef. Added onions, peppers, spinach & mushrooms to bulk it up. I didn't use the tomatoe, but next time I think I will add some salsa, or canned tomatoes to it for something different. This is going to be a weekly dish for me!!! - 7/13/12

Made my own Polenta w/corn meal. Used ground Turkey and followed the recipe exactly. Mine looked NOTHING like the picture! I thought the tomatoes were unnecessary, but did get in some veggies. It was OK, but I don't think I'll be making it again. Made Guac as a side. Took a pic but how do I post it? - 1/24/12
