I prep the bag in the morning and bring it to work, letting it sit in the fridge till lunchtime.

Ingredients

4 oz chicken breast, cut into bite-size pieces
1 oz crumbled feta cheese (I used reduced fat)
1 tbsp Kalamata olives, pitted and roughly chopped
1/4 Tablespoon lemon juice
1/4 teaspoon olive oil
1/4 teaspoon dried oregano
Dash of black pepper
Directions
Combine all ingredients in a steam bag. You can reserve a little feta for garnish.
When ready, place in microwave in a single layer. Microwave for 6- 7 minutes, until chicken is cooked through.
Let stand for a minute, then pour out and garnish. Serve with rice, couscous or pita.
