Teff Squares (Gluten & egg free)

Introduction

Cake like dessert bar- can be made dairy free if you use solid vegetable shortening instead of margarine. Cake like dessert bar- can be made dairy free if you use solid vegetable shortening instead of margarine.
Number of Servings: 12

Ingredients

    1/3 cup canola oil
    1/3 cup softened margarine
    1/3 cup pumpkin
    1/2 cup molasses
    1 TBS Vanilla
    2 cups dark Teff Flour
    1/2 cup potato starch
    1 tsp Baking Soda
    1 tsp Xanthan gum
    1 1/2 TBS Cinnamon spice mix


Directions

Preheat oven to 350*.
Oil a 7x11 or 9x9 glass baking pan.

In large mixing bowl combine oil, margarine, pumpkin, molasses and vanilla. Mix well.
In a separate bowl combine all of the dry ingredients and whisk together.
Mix dry ingredients into the liquids and mix well.
Spread dough into prepared pan and smooth top with a spatula.
Bake 20-25 minutes. Let cool 30 minutes before cutting into 12 pieces.

Serving Size: 1/12 of recipe (size of bar depends on pan used)
