Beet Greens Curry (1 freggie serving)

Introduction

Eat all four freggie (fruits and veggie) servings for a great side dish. Eat all four freggie (fruits and veggie) servings for a great side dish.
Number of Servings: 4

Ingredients

    3 cups beet greens, shredded
    41 grams onions, finely diced
    1/2 tsp olive oil
    4 oz yogurt curry (recipe)

Directions

Yogurt curry is made and is either fresh, frozen or refrigerated.

In heated oil, add onions and saute 5 minutes. Add shredded beet greens and begin wilting.

Add 4 oz yogurt curry.

I enjoy all four servings (3 servings of greens, 1 serving of onions) in one side dish when serve with apple slices (as shown in photograph), tomato slices, or your favorite freggie (not included in nutritional info).

Serving Size: Makes 4 one-freggie servings (albeit quite tiny)
