Chicken with Marjoram in a sour cream tomato broth

Introduction

Number of Servings: 6

Ingredients

    2 TB Coconut Oil
    1 TB Butter
    4 c diced onions
    A pinch of sugar (1/4tsp, here)
    2 c diced bell pepper
    2 TB tomato paste
    2 TB sweet paprika
    1 tsp crushed red pepper
    3lb chicken breasts
    salt and pepper, to taste
    1 tsp dried marjoram
    1 c chicken broth
    1/2 c sour cream (I used full-fat here)
    2 TB fresh herbs (parsley, dill, or chives) as a garnish (optional)

Directions

1) Cook onions and pinch of sugar in oil and butter over medium heat until very soft (about 10 minutes)
2)Stir in bell peppers, tomato paste, paprika, and crushed red pepper. Season chicken with salt and pepper, and add to the pot. Add marjoram and broth. Cover with a lid, simmer under medium-low for almost an hour (until the chicken is very tender).
3) Stir sour cream into the pot after taking it off the heat. Serve over rice, if desired (rice was not added into the ingredients list).
