Chicken Enchilada Soup

Introduction

My best friends mom created this years ago because we loved the Enchilada soup at Chili's restaurant. She got it as close as she could. I still love this recipe. Number of Servings: 9

Ingredients

    4 cups cubed chicken (original recipe calls for 3 cups but I had 4 so used it)
    1 onion diced
    1 pkg taco seasoning mix
    1 pkg enchilada seasoning mix
    1 can diced basil garlic tomatoes
    1 can diced green pepper and onion tomatoes
    5 cups of warer

Directions

cut chicken breasts into cubes and cook in skillet untill done. Blend tomatoes in food processor until smooth, can also blend onions with them if you like. Add tomato mix to soup pot, then add taco and enchilada pkgs along with water. Add chicken when it is cooked through. Heat until all ingredients are hot. Makes about 9.5 1 cup servings.

We fry tortilla strips in a little oil to add to top of soup with a little cheese. I have also used store bought tortilla chiips to save time. Hope you enjoy.
