Easy Broccoli Soup

Introduction

Ingredients

    1 quart of fat free Chicken Broth
    1-lb bag of frozen Broccoli Florets
    1 cup frozen chopped onions
    2 large carrots
    4 oz Velveeta cheese, diced
    1 cup fat free half and half

Directions

In a medium stockpot, simmer the frozen broccoli and onions, along with the carrots (roughly cut into thirds), for about 5 minutes, or until carrots are tender. Reserving about 2 cups of broccoli florets, puree everything in a blender, or if you're fancy, use an immersion blender. Return everything to the pot. Add the Velveeta, and heat until thoroughly melted. Add the half and half (do not boil), cook until heated through, and serve. Add salt and pepper to taste.

Serving Size: Makes 6 1-cup servings
