Claudette's Brocolli Salad

Introduction

Ingredients

    Salad
    8 cups brocolli (or 2 bags of brocolli slaw)
    1 red onion (diced)
    8 oz. mozzarella (shredded)
    1/2 cup dried cranberries
    1/2 cup bacon bits (or more if desired)
    Dressing
    1/2 cup Hellman's Light Mayonnaise
    1/4 cup granulated sugar
    4 tbsp. white vinegar

Tips

I sometimes add sunflower seeds or pine nuts, but this affects the caloric count.


Directions

Peel brocolli stems and cut brocolli into small pieces. Add diced onion, shredded cheese, cranberries and bacon bits in a fairly large bowl. It will be easier to combine.
Whisk dressing in a bowl and add at least 20 minutes before serving. Refrigerate and serve. Yum!
