Spicy Beans

Introduction

Ingredients

    1 large onion
    1 bell pepper
    1 bockwurst, halve penthwise and slice thin
    2 Tbsp olive oil;
    12 oz can tomato paste
    2 cups rinsed drained pinto or other bean
    4 C hot water
    1 Tbsp garlic powder
    1/8 tsp ground coriander seed
    1 Tbsp freshly ground cumin seed (coffee grinders work well for this. I keep one just for non coffee items.)
    1 tsp Sweet Basil leaf
    1 tsp Oregano leaf
    1/4 tsp Celery Seed
    1/4 tsp (or more to taste) Cayenne pepper
    1 tsp salt
    1 Tbsp brown sugar

Directions

Dice and Sautee in X parge skillet till browned. Med Heat:\

2 Tbsp olive oil;


Into small bowl put:

1 Tbsp garlic powder
1/8 tsp ground coriander seed
1 Tbsp freshly ground cumin seed (coffee grinders work well for this. I keep one just for non coffee items.)
1 tsp Sweet Basil leaf
1 tsp Oregano leaf
1/4 tsp Celery Seed
1/4 tsp (or more to taste) Cayenne pepper
1 tsp salt
1 Tbsp brown sugar

When vegetables and bockwurst are browned, add the tomato paste and 4 cups water. Use it to rinse the can so you get it all out.

Add spices and stir till everything is well mixed.
Turn down to med low and simmer 30-45 min, stiring occasionally till the beans are in a thick sauce. take off stove and serve over brown rice,.
