Sweet Buttermilk Pancakes

Introduction

My Dad always made these Scratch Pancakes when we were kids. We didn't have fresh buttermilk on hand often, so you can substitute 1 cup milk instead of the water and buttermilk powder if you would like. The powdered buttermilk keeps well in the refrigerator, so it is easy to have all the ingredients on hand.

Variations:
Substitute 1 Cup of milk for the Buttermilk powder and Water
One Egg can be used instead of 2.
I occasionally add Food Coloring for Suprise - Colored Pancakes

If you have a large Spatula, I sometimes make 7 inch pancake. My son rather Have 1 Large, then 2 smaller pancakes.

Ingredients

    1 Cup Bread Flour
    1/4 Cup Granulated Sugar
    1/4 Cup Saco Cultured Buttermilk Blend
    Baking Powder 1 Tsp
    Baking Soda 1/2 Tsp
    Salt 1/4 Tsp

    1 Cup Water
    2 Large Eggs
    2 TBSP Peanut Oil
    1 Tsp Vanilla Extract

Directions

Sift dry ingredients into a 2 Qt. Mixing bowl. Add beaten eggs, water, vanilla, oil. Beat with Whisl until smooth. Do not overbeat. Let Stand 5 minutes to thicken.

Drop from a spoon into a hot, lightly oiled griddle. Cook until the top is full of small bubbles (The bubbles on the edge should pop and remain open) and underside is brown. Turn and brown on the otherside.

Serving Size: Makes 10 4 inch Pancakes, 2 4 inch Pancakes is a serving
