Soup, Creamed Potato & Spinach

Introduction

I was fascinated by the potato & spinach soup recipe, but we like to have chunky soups and want our spinach to taste fresh, so I adapted the recipe to add the spinach at the end and to top with a little Swiss cheese. Delicious and very filling, even without meat!
You can add 1 cup of diced chicken to this recipe, for extra protein.

Ingredients

    1 Tbsp canola oil
    1 medium onion, chopped
    1 clove garlic, minced
    6 medium potatoes with skins, washed & diced
    4 cups Chicken broth, low sodium
    1 Tbsp rosemary
    2 Tbsp pepper, fresh ground
    1 can cream of mushroom soup, low sodium
    1 1/2 cups water
    1 can sliced mushrooms

    10 oz package fresh baby spinach
    5 oz Swiss cheese

Directions

Heat oil in pot; add onions & garlic. Cook until transparent, approx. 5 minutes. Add garlic & cook another 2 minutes. Add diced potatoes & chicken broth; cook for 1/2 hour until potatoes are done. Add rosemary & pepper & cook 10 minutes more. Add the cream of mushroom soup, water and mushrooms; stir well & bring to a boil, then simmer for 15 minutes more to meld flavors.
Tear spinach leaves, approximately 3/4 - 1 cup, into each bowl. Top with 1 cup of soup mixture and microwave for 1 1/2 minutes to wilt spinach. Stir each bowl, then top with 1/2 oz. Swiss cheese and serve immediately.
