Mushroom & Bean Chili

Introduction

Number of Servings: 5

Ingredients

    1 package mushrooms, cleaned and sliced
    1 package chili seasoning
    2 tablespoons olive oil
    1 15oz can tomato sauce
    3 15oz cans beans (I use mixture of black, pinto & kidney), rinsed and drained

Directions

Saute a package of sliced mushrooms in the olive oil, chopping the mushrooms with a spatula to desired size. Add the chili seasoning packet, so the olive oil can help release the chili flavor. Then add a can of tomato sauce and the 3 cans of beans, rinsed and drained. Bring to a boil, then lower to a simmer. Allow to simmer for about 30 minutes. Makes 5 servings of about 1 1/2 cups each.

Serving Size: about 5 1 1/2 cup servings
