beef flank steak - the biggest one you can find
(try to get one of even thickness)
1/2 cup sherry
1/2 cup soy sauce
garlic, about 2 cloves (you can use powdered, fresh, or minced)
ginger, about 2 T (powdered or fresh minced)
1/2 cup dark brown sugar
Mix the remaining ingredients in a plastic zipper lock bag, or in a marinade container. Dilute the final volume with a nearly equal volume of water.
Place the scored meat in the marinade. If using a bag, squeeze out all the air you can. Refrigerate the marinating meat for several hours, turning occasionally.
Broil the steak until it slightly chars, and then turn and repeat. Let it rest several minutes before slicing, because it will be very juicy and will bleed itself dry if you slice it too soon.
I have tried this on the grill and it doesn't come out nearly so nicely as when broiled.
