Spinach Artichoke Dip

Introduction

Light version of an old favorite. Light version of an old favorite.
Number of Servings: 6

Ingredients

    2 T Smart Balance Light Spread
    2 T flour
    2 cloves garlic, minced
    1 cup Chicken Broth
    1 bag fresh spinach or 1 box chopped frozen
    1 can artichoke hearts or 1 box frozen
    1 dash lemon juice
    1/2 cup grated parmesan cheese
    3 T light mayonnaise

Directions

Melt butter in sauce pan over medium high heat. Add garlic and cook for 30 seconds. Add flour. Mix with whisk until running to meet each other in the pan (like making cream sauce).
Slowly add chicken broth and continue stirring until thickened slightly. Add fresh spinach leaves. Cook for a few minutes. Put in food processor and pulse a few times to desired consistency. Return to pan. Add artichoke hearts to food processor and pulse until desired consistency. add to spinach/chicken mixture and add parmesan cheese. Cook for one minute. Remove from heat and add light mayonnaise. Mix well.

Pour into shallow baking pan (glass pie dish works well). Bake at 350 degrees for 15 minutes or until bubbly.

Makes six half cup servings.
