IntroductionWelsh Ginger Beer Welsh Ginger Beer
1 pint dandelions (leaves & blooms)
1 pint nettles
1 stalk rhubarb
1-1/2 sticks ginger
3 pints cold water
3 or 4 black currant leaves
6-1/2 oz sugar
Strain & add sugart to the liquid. sitr well. Add 3 more pints of cold water. When lukewarwm, mix half an ounce of yeast in a coup of the liquid & add back to the remainder. Leave covered overnight in a warm place. In the morning skim off the yeast & bottle the liquid. Do not cork tightly until it settles.
Once settled it is ready to serve. (usually 3 to 4 days)
