Oatmeal Merinque Pancakes

Introduction

Ingredients

    In a large mixing bowl thoroughly mix the oatmeal, cinnamon, sugar, skim milk, baking powder and nonfat dry milk. Set aside.
    In another mixing bowl, beat the egg whites until foamy. Add the Cream of Tartar and continue beating the egg whites until they form soft peaks.
    Pour the egg whites onto the oatmeal mixture and gently fold them together until just mixed.

Directions

Heat a non-stick skillet with Pam spray until hot. Spoon the oatmeal and meringue mixture by large tablespoons onto the skillet. Cook on both sides until brown and the egg whites are cooked through.
