Introduction

This soup is thickened with wheat flour and unsweetened almond milk. Add salt, pepper, red pepper flakes, garlic salt, to taste. Sprinkle with cheese if desired. Ingredients

    6 Russet potatoes, peeled and diced
    1 large onion, diced
    5 slices of bacon
    1/2 c. wheat flour
    16 oz. unsweetened almond milk
    6 c. chicken broth, 99% fat free

Directions

Dice potatoes and onion. Put in crock pot cover with chicken broth. Season. Cook on high until potatoes are tender. Mash potatoes with potato masher (right in the soup). Cook bacon, crumble and add to soup. Reserve 2 T. of bacon grease to make roux with wheat flour. Add almond milk. Add gravy type mixture to the soup and stir. Simmer while soup thickens. Serve with grated cheddar cheese.
