Textured Multigrain Country Fair Bread

Introduction

Ingredients

    dry yeast
    warm water
    splenda packets
    rice flour
    unbleached whole wheat white flour
    egg substitute liquid
    fat free margarine
    wheat germ toasted, plain
    instant non fat milk, reconstituted
    pinch of salt


Directions

Wet yeast with lukewarm water, add one splenda packet and 2-3 tsp white flour. Set aside, watch for activity (bubbles and rising).
Mix well wheat germ, rice flour, salt, one cup white flour.
Add margarine and scalded instant milk. Mix well and cool.
When above mixture cooled add yeast mix, blend well.
Add eggs, blend well again.
Add one cup of flour at a time until mixture absorbs all moisture. Usually two loaves command 8-9 cups flour but rice bran and wheat germ absorb more liquid than usual so I used total 6 cups flour and almost one cup wheat germ.

Punch mixture down that has risen while mixing. Cut into loaves and place in parchment paper lined loaf pans. Let rise to height of loaf pan.

Bake 325 degrees for 5 minutes. Loaves should rice one inch above height of pan. Adjust heat to 350 degrees and bake another 25 minutes. Remove loaves and parchment paper, let bottom crust dry out in oven an additional five minutes.

I made two 9 inch loafs with one small round loaf. Each loaf will have at least 12 slices and 6 more slices from mini loaf.

Tasty warm with butter and perserves, great for sandwiches if sliced thin enough.
