Introduction

mom's carrot bread recipe (can also be used for muffins, or frosted and called "cake" :) mom's carrot bread recipe (can also be used for muffins, or frosted and called "cake" :)
Number of Servings: 10

Ingredients

    1 cup shredded carrot
    2 large eggs
    2/3 cup vegetable oil
    1 cup sugar
    1.5 cups whole wheat pastry flour (or all purpose flour is fine too)
    .5 tsp baking soda
    .5tsp baking powder
    .5 tsp salt
    1 tsp cinnamon
    .5 cup chopped walnuts

Directions

In a large bowl mix together carrot, eggs, and oil until well combined

in a separate combine flour, sugar, baking soda, baking powder, salt an cinnamon

Add dry ingredients to carrot mixture, stirring by hand until well combined

Pour in to greased loaf pan and bake in preheated oven for about 1 hour


Serving Size: makes 8 - 10 slices
