Chunky Chicken Chili

Introduction

A slightly different variation of my turkey chili. A slightly different variation of my turkey chili.
Number of Servings: 10

Ingredients

    Black Beans, 1 Can drained and rinsed
    Kuners Southwestern Corn, 1 Can drained
    Gold'n Plump Ground Chicken, 1lb 90/10
    Gold'n Plump Ground Chicken, 1lb 95/5
    Pico de Gallo, 12 Oz
    Tomato Sauce, Muir Glen Premium (1 Can / 426g)
    Diced Tomatoes, Muir Glen Organic Fire Roasted No Salt Added (1 can)
    Garlic Powder 1 tbsp
    Chili Powder 1/3 cup
    Cayenne Pepper 1/2 tsp
    Black Pepper 1/4 tsp
    Sea Salt 1/8 tsp

Directions

Rinse and drain black beans, leave in collander...add one can of Kuner SW Corn & Pepper and allow to drain...
Brown chicken (I did in 4 small batches)...add to collander...I used a teeny bit of lt olive oil for the browning...
Add pico de gallo to pan and allow moisture to cook off a bit...I started adding spices here...garlic powder, peppers, sea salt & half of chili powder...
After a few minutes add one 6 oz bag of baby spinach and cook down...then add Tomato Sauce and Diced Tomatoes...
After a couple minutes taste and add enough chili powder for your liking...
Then add everything in collander into it and cover and simmer on low for 10-20 minutes...stirring occasionally...

Serving Size: Makes 10.5 8oz Bowls
