Number of Servings: 4

Ingredients

    1 tsp olive oil
    1 leek, finely sliced
    3 cloves garlic, minced
    1 package frozen spinach (10 oz), thawed, drained, squeezed and chopped if necessary
    1 cup 2% milk
    2 tsp whole-wheat flour
    50 grams Lucerne light cream cheese (about 3.5 tbsp)
    1/2 tsp ground nutmeg
    Salt and pepper to taste

Directions

Heat the olive oil in a medium sauce pan.

Add leek and garlic, saute three minutes.

Add spinach, saute two minutes.

Combine milk and flour, stir well with a fork. Add to spinach mixture, stir until thick.

Add cream cheese, stir to combine evenly.

Add nutmeg, salt and pepper. Stir to combine.

Serve!

Serving Size: Serves four.
