Blackened Shrimp Alfredo Florentine w/ Rotini

This is a simple dish, very quick, and easy to customize to your tastes.

Serve with a salad and your favorite low fat dressing, or your favorite vegetable.

Number of Servings: 4

Ingredients

    1 bag large Kroger frozen shrimp (about 20), thawed
    1 cup Bertolli Garlic Alfredo sauce
    1 tsp blackened seasoning (or to taste)
    2 cups rotini pasta, cooked
    1/2 of 10oz package frozen chopped spinach
    1/2 tbsp EVOO (for sauteing shrimp)

Tips

I put down half a package of frozen spinach in the recipe because I don't think most people like quite as much spinach in there as I do - I usually put the whole package in!


Directions

Cook rotini according to package directions and your preference.

While rotini cooks, put olive oil in pan and bring to medium heat. Lightly coat shrimp in blackened seasoning and put in pan. Saute until done, about 4 minutes or until just opaque.

While shrimp sautes, put alfredo sauce and spinach in small pot and simmer 5 minutes or until hot.

Toss pasta in sauce and top with shrimp.
