Hearty Southwest Breakfast Burritos

Introduction

I eat my heartiest meal for breakfast, so I don't feel guilty about the calories and fat in this one! Plus, it keeps me full until lunch, so I don't need a snack in the morning.

Number of Servings: 17

Ingredients

    17 Tortillas
    1/2 pound pork sausage
    2 cup 2% shredded cheese
    9 eggs
    1 cup hashbrowns (I use the chunky ones)
    1/2 cup salsa
    1 chopped bell pepper

Directions

Brown pork. Add eggs, slightly beaten and cook until almost set. Add cheese and hashbrowns (I don't pre-brown my browns, I just make sure they are thawed). Stir in salsa and chopped bell pepper.

Warm tortillas in microwave to make more pliable. Divide mixture 12 ways and fold one serving in each burrito. I wrap mine in foil and heat it in a 350 degree oven for 30 minutes while I get ready in the morning and take it with me to work.
