Creamy Vegan Avocado Salad Dressing

Introduction

This is a great and easy salad dressing for Mexican inspired dishes. Great on tacos and burritos too! This is a great and easy salad dressing for Mexican inspired dishes. Great on tacos and burritos too!
Number of Servings: 10

Ingredients

    1/2 Haas avocado
    1/2 cup unsweetened soy milk
    1/4 tsp minced garlic
    1/4 tsp sea salt
    1/4 tsp fresh ground black pepper
    1/4 tsp chili powder
    Juice of one wedge of lime

Directions

place all ingredients in a food processor or blender and pulse until everything is creamy. Makes about 10 tablespoons of dressing.

I had to tweak it based on the ingredients I had on hand, no salt (I'm sure it enhances the flavor, but I have to eat as low sodium as possible) almond milk instead of soy and McCormick southwest sweet and smoky salt free seasoning instead of chili powder and pepper.
