Greek Style Stuffed Chicken Breasts

Ingredients

    2 tbsp bulgar wheat - raw
    1/4 cup very hot low sodium chicken broth
    30 grams soft goat cheese (or feta if you prefer)
    3 large cured black olives, chopped
    1 sage leaf, crumbled
    1 tbsp Kraft Greek low calorie salad dressing
    3 - 4 oz skinless/boneless chicken breasts

Directions

Preheat oven to 350 degrees

Combine bulgur with hot broth, cover and let stand for 15 minutes

While bulgur is absorbing the broth, chop olives, crumble cheese and mix with sage. Mix with bulgur once ready.

Place chicken breasts on plastic wrap, and cover with another sheet of wrap. Pound with meat mallet until they are about 1/4 inch thick

Place chicken, top side down on a clean surface and evenly spread with stuffing mixture.

Starting at the narrow end of the breast, tightly roll up the chicken. Place seam side down in a small baking dish. Secure with toothpick if necessary. Drizzle with 1 tbsp Greek low fat salad dressing.

Bake 40 minutes

Serve with steamed broccoli
