Tuscan White Bean & Spinach Soup

Introduction

I adapted this recipe to include less items from store bought cans. I also use the Frontier Vegetable Broth Powder as my low sodium soup base. It can be found in some bulk spice bins. You can see the original recipe here:

Ingredients

    .75 cups white beans from dry (cannellini or other)
    2 teaspoons olive oil
    1 garlic clove, finely minced
    1 shallot, finely diced
    4 cups water
    3 tablespoons low sodium vegetable broth powder
    1 pint home canned tomatoes or low sodium tomatoes
    1 tsp rosemary
    1/8 teaspoon black pepper
    1 dash crushed red pepper flakes
    2 oz dry whole wheat rotini, shells or other pasta
    3 cups baby spinach, cleaned and trimmed
    serve with Parmesan cheese (not incl in nutrition)

Directions

1. 1 day in advance soak beans.
2. After 24 hours, cook beans per directions (pressure cooker is quickest)
3. Start boiling pasta separately as you cook the other ingredients
4. In a large sauce pan, sautee the shallots & garlic in the olive oil.
5. Add water, broth poweder, tomatoes, beans and rosemary to pot. Season with black and red pepper. Bring to boil.
6. Add pasta
7. Add spinach and cook until wilted.

Serving Size: 4 1.5 cup servings
