Cassie's Sun Dried Tomato Mac and Cheese

Introduction

Number of Servings: 8

Ingredients

    3 cups uncooked pasta
    3 tbsp butter
    1/4 cup all purpose flour
    1 cup milk
    8 oz. 2% velveeta, cubed

Directions

Cook the pasta in boiling water until al dente. While the pasta is cooking, melt 3 tbsp. butter in a sauce pan. When the butter is melted, add 1/4 cup flour. Cook for about 2 minutes. Gradually add the milk. Bring to a boil, stirring constantly. Reduce heat and cook until the mixture thickens. Then, gradually add the cheese cubes. Once all of the cheese is melted in, add the sun dried tomatoes. Mix the pasta and the cheese sauce together, put in an oven safe casserole and bake for about 20 minutes.

Serving Size: makes about 8 1 cup servings
