Dredge flounder in flour, salt and pepper. Melt 2 T butter and vegetable oil, and cook over med-high heat, turning once. Approx. 3 minutes per side. Once cooked, remove fish from heat. Add remaining butter, capers, and 2T lemon juice (or to taste.) Wisk together and pour sauce over fish.
Serving Size: makes 4 fillets
