17-Day Diet Primavera Delight

Ingredients

1 Spaghetti Squash
2 Cups Chopped Fresh Broccoli
1 Small Onion, Diced
2 Cloves Garlic, Diced
1 Tablespoon Olive Oil
2 Cups Marinara Sauce
Directions
1. Cut squash in half lengthwise and remove seeds and pulp. Place it in a glass pan cut side down and pour about 1/2 inch of water into the pan. Bake for 40-45 minutes at 275 degrees.
2. Let the squash cool and remove the "pasta" with a fork. Set. aside.
3. In a skillet saute the onions, garlic until soft. Add the broccoli and cook until tender-crisp.
4. Serve with a topping of marinara sauce and a little
Parmesan cheese.
Serving Size: Makes 4 - 2-Cup Servings
