Number of Servings: 35

Ingredients

    1 egg white
    1/3 cup sugar
1 six-ounce bag (about 2 cups) sliced or slivered almonds
1/3 cup chocolate chips (I used Hershey's Special Dark)

Directions

1. Preheat oven to 300 F.
2. Line a cookie sheet with aluminum foil, parchment paper, or a Teflon liner.
3. In a medium bowl, whisk together the egg white and sugar.
4. Add the nuts and stir well to coat.
5. Using a spoon, make small mounds of the nut mixture on the cookie sheet. The mounds should be fairly dense and spaced close together since they will not spread as they bake.
6. Top each mound with a few chocolate chips.
7. Bake until the cookies are lightly browned, about 20 to 22 minutes.

When done, carefully place cookies on wire racks to cool. Store in a cookie tin to keep crisp.

Serving Size: Makes 35-40 cookies
