Ingredients

    1 lb. boneless pork chops cut into large pieces
    1 large (1.5 lb.) daikon radish, peeled and cut into thick slices
    2 tbslp. miso paste
    1 c. roughly chopped scallions
    1 small onion, sliced
    1 tblsp. brown sugar
    4 large slices of ginger
    8 cloves of garlic
    2 tsp. sesame oil
    7 tbsp. soy sauce
    3 tbsp. mirin
    2 c. sliced mushrooms
    splash of brown rice vinegar
    8 cups of water

Directions

Cut the pork into large pieces, peel and sliced the daikon, and complete the rest of your prep. For the garlic, just smash each clove and remove the skins.

Combine all ingredients EXCEPT the mushrooms, daikon, and pork in a large, heavy walled pot (a cast iron dutch oven is perfect) and bring to a boil, stirring to mix the ingredients and incorporating the miso and brown sugar.

Add the pork and daikon and bring back to a boil, then reduce heat to medium low ("2" on a gas range) and cover.

Let cook for 4-6 hours, stirring occasionally, then serve.

Serving Size: Makes four large bowls of soup
