Introduction

Fresh homemade muffins in less time than it takes to run to the bakery!

High fiber, low fat, tasty muffins for breakfast or a snack. I use fresh pumpkin, but canned will work just as well.

Ingredients

    1/2 C whole wheat flour
    1 1/2 C oat bran
    2 tsp baking powder
    1/4 tsp salt
    2/3 C brown sugar
    1/2 tsp fresh ground nutmeg
    1/2 tsp cinnamon
    1/2 tsp allspice
    1/4 tsp ground cloves

    1/2 C nonfat milk
    2 tbs canola oil
    1 C cooked pumpkin, mashed
    2 egg whites
    1/4 C dried cranberries
    1/4 C chopped walnuts

Directions

In a large bowl, combine dry ingredients - stir well. Add all other ingredients and stir until well moistened. Spoon into 12 lightly greased muffin tins. Bake at 425 F for 20 minutes. Yield: 12 muffins
