Keema Low Carb Version

Introduction

This is a favorite of mine. I eliminated the potatoes and peas and added cauliflower and green bell pepper. It is delish! I had this with cooked butternut squash but you can have it with brown rice or just a green salad. This is a favorite of mine. Number of Servings: 2

Ingredients

    1/2 pound of very lean ground beef
    1.5 Tablespoons olive oil
    1/2 cup of chopped onion
    1/2 cup of chopped tomato
    1/2 cup of chopped green bell pepper
    1 cup of cooked chopped cauliflower
    1 teaspoon of minced garlic
    1 small can of V-8 juice (5.5 oz.) low sodium
    1/2 tablespoon of curry powder
    1/2 teaspoon of cinnamon
    1/2 teaspoon of ginger
    1/4 teaspoon of ground red pepper

Directions

Chop the vegies and saute in a large nonstick skillet with the olive oil. Saute until the vegies are soft. Add the spices and lean ground beef. Stir until the meat has no large clumps and is no longer pink. Add the V-8 juice. Simmer on low for 10 minutes. Taste for seasoning. Add salt and pepper to your taste.

Serving Size: Makes 2 large servings
