White Bean Vegetable Soup, Gluten Free Vegan

Introduction

Ingredients

    White Northern beans, celery, onion, carrots, bay, oil, salt, spices to taste.

Directions

Cooking time does not include soaking the beans overnight. Sort and rinse beans well. In a large soup pot soak beans overnight according to package instructions. Add bay leaves to the soaking liquid. In the morning, chop the onion, carrots and celery (including inner leaves) and saute in oil. Set aside.

Meanwhile, remove bay leaves from pot. Using an immersion (hand) blender puree about half the beans directly in the cooking pot. This can be adjusted to personal taste. Add vegetable mixture and spices / herbs of choice. Heat soup thoroughly.

Serve with crusty gluten free bread or croutons. Sprinkle with paprika or chili powder and fresh minced parsley or chives before serving.
