Cashew Chicken with Bok Choy

Ingredients

    1 pound boneless and skinless chicken breasts, cut into strips
    1 cup chopped celery
    1 medium sweet red pepper julienned
    1/2 cup chopped onioin
    1 tsp minced garlic
    1/4 cup soy sauce or reduced sodium soy sauce
    1 tbsp canola oil
    1 tsp cornstarch
    1/2 cup reduced sodium chicken broth
    1/8 tsp pepper
    1 head bok choy sliced
    1/4 cup salted cashews
    1 5oz can of water chesnuts
    1 cup mung bean sprouts

Directions

In a large skillet or wok, stir-fry the chicken, celery, onion, red pepper, onioin and garlic in soy sauce and oil until chicken is no longer pink.
In a small bowl, combine the cornstarch, broth, and pepper until smooth. Stir into the skillet. Bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in bok choy. Reduce heat to medium, cover and cook for 5 minutes or until bok choy is tender. Sprinkle with cashews. Serve with rice.
