Turkey Meatballs

Number of Servings: 24

Ingredients

    1 package ground turkey (1.36lbs)

    Marinade:
    1 onion, chopped finely
    1 T crushed garlic
    1 bunch cilantro, chopped finely
    1 bunch Italian parsley, chopped finely

    2 eggs, large
    2 cups marinara
    1/2 cup water
    1 cup chopped mushrooms

    spices:
    2 T cumin
    1 T garlic powder
    1 t cinnamon
    2 T Italian spice blend
    2 t chili powder

Directions

the night before, mix turkey and all items of marinade, as well as all the spices in a bowl very well. cover and leave in fridge to marinate overnight.

spray a large cooking sheet and preheat over to 400 degrees.
add egg to the turkey mix, and mix well. with your hands, make firm balls of the turkey mix the size of a golf ball and set on cookie sheet. place in the oven and let cook for 30 minutes. turn on broiler and let cook for 10-15 minutes or until top is brown.

place cooking pot on low heat and bring water and marinara mix to boil with mushrooms. add meatballs and reduce heat to minimum. let cook for 20 minutes.

serve with pasta or in an artisan bread as a sub. enjoy.

Serving Size: makes 24 meatballs and about 1/4 cup of sauce+mushrooms. calculated serving size is 1 ball.
