Crusty Salmon with Guacamole

Ingredients

    4 4-oz salmon filets
    2 t olive oil
    cumin, salt & pepper to taste

    2 ripe Haas avocadoes
    1 cup chopped tomatoes (cherry best out of season)
    1/2 cup onions or scallions, chopped
    1/2 cup cilantro
    juice of 2 limes
    onion powder to taste
    garlic powder to taste
    S&P to taste
    hot sauce or chili sauce, optional

Directions

Make the guacamole first so it has time to meld in the fridge: mash all ingredients together. I start with approx 1 T of garlic powder and 1 T of onion. If you think it needs more salt, add more lime juice first.

For the salmon, preheat oven to 425. Fry the filets in 2 t olive oil until brown (~2 min). Bake for about 5-8 minutes until it flakes. Serve with large scoop (1/2 cup) guacamole and lime wedges on side.

Good accompaniments are brown rice or quinoa. Leftovers are good cold, wrapped up in a tortilla.

Serving Size: Makes 4 servings w/1/2 cup guacamole each
