Beef Stroganoff

Ingredients

    1 pound lean ground beef
    2.5 c diced celery
    1 large onion, diced
    0.5 c reduced fat sour cream
    4 T paprika
    1 T cornstarch

Directions

Makes 6 1-cup servings

Dice celery and onion while the ground beef browns in a frying pan.
When meat is browned, add diced celery and onion to pan.
When vegetables are softened, add paprika and mix in well.
Then add sour cream. If sauce looks thin, add 1 T of cornstarch dissolved in .25 c water and cook until cornstarch thickens sauce (about 2 minutes).

Tastes good with toast, or served on a bed of steamed cabbage.
