1/4 cup chopped onion 1 garlic clove, minced 2/3 cup uncooked long grain rice 1 1/3 cups fat free chicken broth 1/4 tsp salt 1/8 tsp saffron
Coat a sauce pan with cooking spray; place over medium high heat until hot. Add onion and garlic saute until tender. Add rice, saute 1 minute stirring constantly. Sitr in chicken broth, salt, and saffron. Bring to a boil. cover. Reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.
